Veggie Week: Spinach and Ricotta Gnocchi
First and foremost, it’s Veggie Week! Yes, i will be doing exciting things with veggies. This is half inspired by my “failed” blood work test where I had a slightly high cholesterol, but I also want to show some non-meat dishes that can be made. Now, to the gnocchi.
Very few things are as intimidating as making your own pasta. Throw in some cool ingredients though, and it made me perk up for the challenge. You should always be pushing yourself through barriers, even in cooking.
The recipe is fairly simple out of my Mediterranean cookbook. Out of respect for the author, I am not going to give the recipe out, I will give you a link to where you can buy the book in an update. (I support authors making money on their work, and dislike the idea of being sued)
I can tell you however, that the gnocchi was very simple to prepare, and although I probably overdid the flour, still tasted pretty decent with some Romano cheese and butter on it. I can also tell you that the ingredients, aside from the Ricotta, where dirt cheap.
The estimated cost to make 3 personal servings was a total of $10. Plus, I got feel good about mixing together an all veggie meal that didn’t suck and make my own pasta for the first time.
